thesis is related to the tasks mentioned above:
CO2-induced structuring/texturing of breads made from climate-tolerant raw materials that cannot be baked on their own
The fluctuating quality of the wheat harvest in recent years provides insights into the possible impact of climate change on future crop years. The higher probability of extreme weather and rising average temperatures drastically increase the risk of weather and pest-related crop losses. Therefore, more climate-tolerant starch sources should be considered as a basis for the production of baked goods at an early stage. The processability of these cereal raw materials poses challenges due to the limited gas holding capacity. By rethinking the baking process, taking into account the changed material requirements, a new texturing tool for sensory appealing breads made from alternative, climate-tolerant raw materials is to be developed in this project.

We offer a part-time position (50%). The employment takes place with appropriate remuneration according to the collective agreement for the public service of the federal states (TV-L). There is an opportunity for a doctorate. The TU Munich aims to increase the proportion of women, so qualified women are strongly encouraged to apply. Severely disabled persons are given preference if their suitability and qualifications are otherwise essentially the same.
